Abstract Know-how has been developed for the preservation of prawn waste (shell and head) and the prepration of chitin and chitosan, important industrialm chemicals, from the waste. Preservation of the waste for a week is acheived by keeping it under 1-2% sodium hydroxide solution. The main steps in the isolation of chitin are removal of proteins by boiling with aqueous sodium hydrixide solution (5%), immersing overnight in hydrogen peroxide solution(0.5%) and demineralization with dilute hydrochloric acid. Chitosan is obtained from chitin by deacetylation with strong aqueous and alcoholic alkali solution.
