Abstract Quality and safety are the bizzwords in global seafood trade. Most developed fish importing nations have introduced strict quality and hygiene regulations and legislation including standards for fishery product. India has a unique system of fish inspection and quality control with definitive standards for all fishery products. The In-Process Quality Control (IPQC) in the exporting untis as a Quality Assurance System now being practiced. The Hazard Analysis Critical Control Point (HACCP) concept of the US has been taken as a food safety standard by International bodies. Recently, India is planning to go in par with the safety assurance systems getting popular in the international arena. The success of the Quality Assurance is dependent on the selection and evaluation of raw fish, process control, cleaning disinfection and personal hygiene. Here, the authors review the quality status of Indian seafoods for export and discuss the methods to evaluate the quality (starting from raw material) based on sensory analysis, instrumental methods, micro biological profile and chemical indices including nuceotide related compounds. Methods to monitor spoilage compounds, contaminants, biotoxins and filth are also dealt with for an improved Quality Assurance System. Generating resource personnel and technology upgradation as part of the seafood trade is suggested.
