The United Nations Development Fund for Women (UNIFEM) has financed a series of manuals on the processing and conservation of foodstuffs. The manuals are written and produced by the Intermediate Technology Development Group and the Italian Association for Women in Development (AIDOS). The books are not designed for a specialist readership, but aim to inform readers on the technological options available in the processing: and conservation of foodstuffs. Their main objective is to emphasize the special role of women in the food cycle and in basic food technology. The first four titles Oil Extraction, Fruit and Vegetable Processing, Cereal Processing, and Fish processing have all been published in both English and French. Portuguese translations are being prepared.
