LC-MS/MS discovery characterisation of 20 rye cultivars after gluten enrichment (using IPA/DTT) and tryptic digestion.Data set includes raw MS data and ProteinPilot results files. The samples were also analysed with a quantitative LC-MRM-MS method (rye peptide markers) with all raw data uploaded for: (1) 20 rye cultivars; (2) 16 cereals and pseudocereals; (3) a range of food products (10 breakfast cereals and 7 snack foods); (4) repeat analysis on spelt after contamination was noted in batch 1.
