Description Solvents (methanol, ethanol, n-propanol, iso-propanol, n-butanol, iso-butanol, iso-amyl alcohol, ethyl acetate, acetone and mixtures of these) were used for removing the pigments from acid and heat precipitated leaf protein concentrate (LPC). For acid precipitated LPC the min. vol. of solvent required was with acetone, followed by iso-propanol less than iso-propanol + hexane (2:1) and acetone + hexane (2:1) less than n-propanol and n-butanol less than ethanol. For heat precipitated LPC the order of min. solvent requirements was acetone less than iso-propanol less than iso-propanol + hexane (2:1) less than n-propanol and n-butanol less than acetone + hexane (2:1). The solvent extracted LPC contained higher quantities of protein (49.8-70.8%) than the control. Acid precipitated and solvent extracted LPC had lighter colour than heat treated LPC. Lightest coloured LPC by heat precipitation was obtained with iso-propanol + hexane (2:1), and iso-propanol treated LPC gave lightest colour in acid treated LPC.
