Description Red Delicious apples were harvested 75 days after full bloom at 7-10 day intervals to represent 3 stages of maturity during 1974, 1975 and 1976. They were transported for 2-4 days from Himachal Pradesh to Mysore and stored at 32-34 degree F with 80-85% RH for 2.0 to 7.5 months. Spoilage during storage ranged from 0 to 6%, spoilage and shrivelling being within reasonable limits irrespective of fruit maturity stage. Apples at different stages of harvest, over 3 seasons showed a uniform trend of decreasing fruit pressure, increasing soluble solids content, decreasing acidity, and increasing % seed browning with the progressive harvesting stage. Time taken to attain optimum maturity as indicated by sensory quality of stored apples varied from 130 to 135 days from full bloom depending upon the year. Fruit harvested at optimum maturity showed a longer and shrivel-free cold storage life, maintaining superior sensory quality during storage.
