Description Use of modified atmosphere packaging to extend the shelf life of fresh vegetables is reviewed. Aspects considered include: factors affecting shelf life (loss of water, respiration and metabolism, microbial spoilage); factors capable of extending shelf life (harvesting at optimum maturity with min. injuries, using proper sanitation procedures, providing optimum storage conditions); advent of modified atmosphere (MA) storage; controlled atmosphere (CA) storage; modified atmosphere packaging (MAP); MAP techniques; low pressure storage - a form of CA storage; gases used in MAP; optimization of the atmosphere; recommended CA storage conditions during transport/storage of vegetables; beneficial effects of CA/MA storage on some vegetables; MAP and microbial growth (storage temp., humidity, extended storage life, storage atmosphere, ability of the produce to support microbial growth); biochemical and physiological basis for the effects of MAP; MAP systems (gas and water vapour permeabilities of some selected films available for MAP of fresh produce); and use of MAP for vegetables worldwide.
