Description Suitability of tinplate manufactured by Tinplate Co. of India Ltd. (TCIL) was studied by canning (i) mango pulp, (ii) tomato puree, (iii) orange juice, (iv) pineapple products including juice, titbits and slices separately, (v) jam from grape and cherry, (vi) guava, (vii) potatoes and (viii) mango juice, under factory conditions. Canned products were stored at room temp. (25-30 degree C) and at 37 degree C, and analysed at 3 month intervals for can appearance, loss of vacuum, can interior surface for detinned spots/patches and for organoleptic quality of the product. Up to 9 months, quality of (i) was acceptable, with the tin content below the acceptable limit. After 12 months heavy feathering with heavy detinning was observed. In (ii) up to 6 months, quality of the product was good, with heavy feathering and slight detinning. After 12 months, especially at 37 degree C, complete detinning was observed. With (iii), quality of the product (colour, taste and flavour) stored at both the temp. remained good and was acceptable up to 12 months storage. In (iv), quality of the pineapple products was good, and only after 11 months at 37 degree C was a metallic taste perceptible in the products. In (v), after 2 months storage at 37 degree C both products had slight metallic taste in both TCIL and control cans (imported tinplate). In (vi), up to 12 months at ambient temp. the products was acceptable, but at 37 degree C metallic taste with heavy feathering of TCIL was observed. In (vii), quality of the product was acceptable at both temp. up to 12 months. In (viii) up to 9 months, vacuum retention was good, and quality of the product was good at both temp. up to 12 months. It is concluded that the OTSC quality tinplate manufactured by TCIL compares well with imported tinplate, and could be used for canning processed fruit products and potatoes in brine.
