In the present study changes in phytate and phosphorus content and phytase activity were evaluated during the germination of soybean [Glycine max (L.) variety Pusa 20] seeds. In the germinating cotyledons phytate phosphorus made up to 87.68% of the total phosphorus at day zero of germination and decreased gradually to about 25.21% by the twentieth day. Hydrolysis of phytate in cotyledons leads to increased levels of inorganic phosphorus and total phosphorus in the stem, leaf and root tissues of the germinating seedlings. An overall, increase in phytase activity was observed until day 10 after germination after which the phytase activity showed a downward trend in germinating seedling tissues. Increased phytase activity during early period lead to higher content of inorganic phosphorus in germinating seedling tissues and a simultaneous decrease in phytate of cotyledons (81%). Although stems, leaves and roots do not contain phytate but substantial amount of phytase activity was detected in these tissues.
