In this study, physico-chemical and heat induced changes during the preparation and storage of UHT milk were evaluated. Parameters such as pH, acidity, viscosity, sedimentation, colloidal calcium (Ca), colloidal magnesium (Mg), hydroxyl methyl furfural (HMF), lactulose and color value were evaluated.
