Five different plant proteins such as soybean meal (SBM), groundnut oil cake (GNC), rapeseed meal (RSM), sunflower oil cake (SFC) and guar meal (GRM) were tested for proximate composition as well as physical and functional properties before and after fermentation using Aspergillus niger.
