dc.description.abstract | Head waste of commercially important tropical shrimp species, Penaeus monodon (wild), P.indicus (white), Metapenaeus monocerous (brown), P. monodon (culture), are the rich sources of protein, chitin and carotenoids (24-50 ppm). The process parameters for extraction of carotenoprotein (CP) and maximization of its recovery from shrimp head waste (SHW) were developed. pH 5 was found to be iso-electric pH of minimum solubility of CP in all types of SHW. Solubilization of other protein in head waste by added enzymes improved recovery of CP. Trypsin showed highest recovery of 80-90% at 45 C in 2 h of extraction followed by precipitation at pH 5; but pepsin and papain showed moderate recovery of 70-76 and 60-84%, at 45 and 55C, respectively depending on the type of head waste. CP cake rich in carotenoids (132-286 ppm), protein (11-15%) and fat (6-11%) could be used as an ingredient in shrimp and fish feed. | en_US |
