The principle used in food processing is altering their state and its atmosphere suitably to overcome the microbial as well as biochemical reactions so that the product shelf life can be extended. Food processing also helps in making the food fit for consumption by modifying taste, aroma, and texture and improves the nutritional value. Fresh food is highly perishable and can be preserved by use of different conventional processing technologies. However, in spite of many conventional processing technologies, food industry struggles to meet the consumers demand for convenient, nutritious, wholesome safe and quality food. Emerging food processing and packaging technologies will help in achieving this. This chapter provides a detailed note on the available emerging technologies for food processing and preservation.
