Food processing also helps in making the food fit for consumption by modifying taste, aroma, and texture and improves the nutritional value. Fresh food is highly perishable and can be preserved by use of different conventional processing technologies. However, in spite of many conventional processing technologies, food industry struggles to meet the consumers demand for convenient, nutritious, wholesome safe and quality food.
